When the cherries ripen to a deep red, it’s time to pick
• ✋ Hand-picking = only the ripest cherries, best quality.
• 🚜 Machine-picking = faster, but less selective.
• 🕣 A true labor of love requiring skill, timing, and patience.
Once picked, the cherries must be processed quickly to preserve flavor.
• 🌞 Dry (Natural) Method: Sun-dried on patios — sweet, fruity flavors.
• 💧Wet (Washed) Method: Pulp removed, beans ferment in water — bright, clean flavors.
(Each method gives coffee its own personality!
Beans are dried until they hit the magic 11% moisture level.

Before export, beans get a little “spa treatment.
