🔬 Traditional Sumatran Wet-Hulling Process (Giling Basah)

Sumatra’s signature wet-hulling method involves removing the parchment layer while the bean still retains high moisture content (about 30–40%). This process accelerates drying and imparts the distinct earthy, spicy profile that defines Sumatran coffees. Wet-hulling also produces a uniquely greenish-blue hue in the raw bean and a heavy-bodied, syrupy flavor when roasted.
